Steamed Zucchini

Steamed Zucchini with Olive Oil and Thyme
3- 6 servings

Preparation:

3 medium or large zucchini

Slice zucchini into rounds.   Place in steamer.  Steam for 7 – 10 minutes until tender.  Place in serving dish and cover with olive oil and sprinkle with dry thyme leaves.  Serve hot or room temperature.  This dish is very popular in France.

Zucchini clears heat and detoxifies, quenches thirst, relieves restlessness, promotes urination.  Thyme helps the Lungs and Spleen increasing qi circulation, reducing phlegm. Olive oil clears heat, detoxifies, aiding the Liver.
