Amaranth Grain with Cinnamon Stick
Servings: 2

Preparation:

1-1/3 cup water
1/2 cup amaranth grain
1 (1-inch) piece of cinnamon stick

Place water and cinnamon stick in a pot.  Bring water to a boil.  Reduce heat and simmer covered for 5 minutes.  Put in amaranth, stir, bring to boil, reduce heat and simmer for 15 minutes until water is absorbed.  Remove stick and transfer amaranth with a bit of water, to a blender and blend, so you can assimilate the  super small grain. Serve warm.
