Molasses Prune Pie

Prune Molasses Blood Tonic Pie
9″ pie, 350 degrees, 30 minutes

Preparation:

Start the night before:
Cut 1 pound of pitted prunes in half and soak in water overnight

The following day:
DRAIN PRUNES into a bowl, while you prepare crust (drink prune water—good for ya)

Crust:

Mix dry ingredients:

1.5 cups rolled oats
1/2 cup oat flour
1/2 cup oat bran
1/4 cup coconut

Add wet ingredients:

1/4 cup honey
4 Tblsp melted butter or olive oil
enough water or juice to make “dough” stick together

Butter or oil 9” pie pan. Cover hand with plastic bag and press “dough” into bottom and sides of pan.

Prune Filling:

In bowl: Mix

4 egg yolks: beaten
1/4 cup butter: melted
1/2 cup molasses (organic)
1 peel of 1 orange (organic): cut into 1/8 inch squares
1/4 cup wolfberries: soaked 5 minutes in water and drained

Mix in drained prunes: Pour mixture into pie crust. Push prunes down into molasses mixture with the back of a spoon. Pop in the oven for 30 minutes. Cool a bit and serve with plain yogurt. To die for!
