Baked Vegetable Loaf with Pork Sausage

9” loaf pan oiled
Bake 350 degrees for 90 minutes

Preparation:

1 egg beaten
1/2 to 1 pound mild Italian pork sausage or other ground meat
1 small head cauliflower :  broken into small flowerets
1/2 cup parsley : chopped finely
1 cup celery diced
1  carrot grated
20 very small cherry tomatoes whole
1 zucchini : thinly sliced : (I used the slots in my grater)

In a large bowl:  beat egg.  Add meat, grated carrots, celery, parsley.  Mix and separate the meat using a fork or potato masher.  Mix in cauliflower, Mix in tomatoes.  Press mixture into a loaf pan, being careful not to break tomatoes.  Cover top with sliced zucchini. Bake

Energetics:

This dish is very grounding.  Relaxes the back, throat, jaw, Spleen, Pancreas and Stomach.  Abates inflammation, urinary system.  Moves fluids.  It is a Blood and Yin tonic.
