Kumquat Banana Bread

Kumquat Banana Bread
Large bread pan
350 degrees   1 hour – 1 hour 10  minutes

Preparation:

Mix dry ingredients:
2.5 cups spelt flour  
4 tsp baking powder
1/2 tsp sea salt

In large bowl:  place wet ingredients:
1 egg:  beaten
1/4 cup sesame oil
4 very ripe bananas: well mashed
1/2 tsp freshly grated nutmeg

Mix dry ingredients into wet. Mix in:

15 small kumquats:  wash well with water, cut  each into 4 pieces, remove seeds
1 cup walnuts:  chopped

Butter or oil large bread pan. Pour batter into pan.  Pop in the oven for 1 hour to 1 hour 10 minutes.  Cool a bit and serve with butter.
