Barley with Pumpkin Seeds

Preparation:

1 cup   whole barley, rinsed and drained
1/3 cup pumpkin seeds:  pan roasted            , ground to powder
3 cups water, with a pinch of sea salt

Bring water to a boil. Salt water lightly with sea salt.  Add barley.  Reduce heat so that the water is simmering.  Cook barley 40 – 50 minutes for barley to become tender.  When water is absorbed, turn burner off.  OR:  Use slow cooker on low for 7 hours with 3.5 cups water.  Add ground pumpkin seeds, stir.
