Spaghetti Squash with Eggs

Spaghetti Squash with Goose Egg Breakfast
Serves 6

INGREDIENTS:

2 hard cooked goose eggs, peeled, cooled and diced (or use 4 chicken eggs)
½ large spaghetti squash, or one small spaghetti squash:  seeds removed cut into chucks
1 spring onion, chopped
20 black olives
1 – 2 tablespoons fresh thyme or 2 tsp dry thyme
olive oil
natural sea salt
to taste

Preparation:

Steam the cubes of spaghetti squash 15 minutes or so until tender.  Allow to cool so cubes can be handled.  Cut squash away from hard peel and discard the peel.  Mash the squash in a bowl so the strands of the squash meat separate.  Mash the eggs into the squash.  Add the spring onion, olives, thyme.  Taste and add salt and drizzle olive oil over the mixture to taste.

Eggs:

Help to nourish our stomach and spleen helping to ground us.  They are a qi tonic and help to improve blood circulation.  Eggs contain all the amino acids needed by our bodies for complete protein synthesis within our bodies.  They contain protein, iron, phosphorus, potassium, and calcium with Vits A, D and B-complex.  Only 1/3 of the yolk is saturated fat.  Saturated fat with the other 2/3s of the yolk being unsaturated or polyunsaturated is excellent for brain health.

It is best to buy organic free range eggs whenever possible.
