Rose Coconut Milk Gelatin
In small pot on stove, blend:
Juice from 3 fresh young coconuts (about 4.5 cups)
.25 oz or ½ cup agar agar flakes which is seaweed
Scrape the young coconut meat from the interior of each coconut and put half of the contents in a small pudding bowl for a total of 6 bowls.
Bring juice and agar agar flakes to a boil, reduce heat and simmer 15 minutes.
Stir with a whisk as needed as agar agar flakes “melt.”
Turn off heat. Add 1.5 Tablespoons rose water and stir.
Pour equal amount of mixture in each bowl. Chill one hour and serve.
You may want to sprinkle freshly toasted coconut flakes on top.
This is a very cooling and refreshing dessert. It quenches thirst and lifts the spirits, calming the Heart. It benefits the Kidneys and Stomach, is a yin tonic and helps to remove heat, phlegm, water and toxins from the body. A great dessert if one is minding their blood sugar, or during hot weather.
