Serves 6 – 8
Preparation:
7 cups of water
2-3 whole ears of fresh corn: remove corn silk and set aside, cut kernels from cobs, scrape zest from cobs with back of knife or cleaver
put corn silk in a tea cage
2 carrots : chopped
1 or 1/2 of a leek : greens only, sauted in olive oil
soak in water 10 minutes, then drain and discard water:
1 Bai mu ehr (Chinese white ear (tree) fungus: break protrusions off
1/2 oz – 1 oz yu zhu (Solomon’s seal: polygonatum odoratum) cut into small pieces
miso
Saute leeks in the bottom of a soup pot. Add water. Bring water to boil and add corn zest and everything, but the corn. Bring to a simmer and simmer for 10 minutes. Add corn the last 5-10 minutes of simmering – carrots will be tender. Remove corn silk. Place 1/2 – 1 tsp of miso in the bottom of each bowl and add a bit of broth and dissolve miso with a small whisk. Add portions of soup to each bowl. Serve soup warm.
