Mushroom Mousse Soup

Makes 6 cups

Preparation:

Sauté until mushrooms are a bit transparent, but still maintain their shape:

1 pound fresh mushrooms (I used king oyster because of the large stems)
4 Tblsp butter
1 rib celery :  chopped finely
4 green onions, greens only:  chopped finely
1/2 cup of fresh parsley:  minced

Cover with water.  Simmer 5 minutes.

Add:
1 well beaten egg and 1/2 cup cream; mix together, then add to soup
1 pinch freshly grated nutmeg

Simmer 1 more minute.  Blend soup in blender.

Energetics:
