Qi-Lime Pie

Qi-Lime Custard Pie
350 degrees for 45 minutes



Mix dry ingredients:
1.5 cups milled to powder pumpkin seeds
2 Tblsp milled to powder sweet almond kernel
(prunus armeniaca semen : Nan Xing Ren)
3 Tblsp melted coconut oil   
fox nut (euryale ferox) Qian Shi milled to powder

Filling, blend until smooth:
6 egg beaten
13 fluid oz can coconut milk
1/3 cup maple syrup
zest of 2 lime peels 2 Tblsp
juice of 2 limes (4 Tblsp)

Mix Crust:  everything should stick together, if not, add a splash of water.

Use coconut oil to oil 9” glass pie pan (metal pie pan:  the crust may burn).  Cover hand with plastic bag or wet hand with water and press “crust” into bottom and sides of pan.

Pour pie filling into pan.

Bake 45 minutes at 350 degrees in center of oven.
