Beef with Rosemary, Fig, Apple

Serves  6 – 8
Bake 1 hour :  350 degrees

Preparation:

1-1.5 pounds beef in one piece, salt washed and rinsed under running water

Enough of the following ingredients to cover the top surface of the meat:
fresh rosemary leaves chopped finely
dry figssoaked in water, drained (to hydrate them up),  cut in half vertically
fresh apple : grated

Place meat in baking dish.  Add a bit of water to the bottom of the pan.  Cover top surface with rosemary.  Arrange figs, cut side down, on top of the rosemary.  Cover this layer with grated apples. Bake in oven at 350 degrees uncovered
