Twice Baked Yam Pudding with Orange and Dates

Preparation:

Cook  2 pound of yams:

Wash yams, pierce with fork.  Place yams in a baking dish with 1 inch water in the bottom of the pan   Bake at 350 degrees  for  45 minutes.

While hot:  remove skins, mash flesh, adding freshly squeezed orange juice to thin and flavor a bit.  Add 2 beaten eggs.

Dollop of coconut oil in bottom of pyrex pudding dishes, oil sides and bottom.

Add chopped dates.  Cover with a slice of lemon or orange. Fill with yam.

Bake at 350 degrees for  45 minutes.

Top with soaked, then dried, then roasted and covered with honey walnuts.
