Cashew Tofu Loaf

9” Pan, Buttered or Oiled • Bake: 350° for 40 minutes

Prepare:

Steam 1 cup of cauliflower chopped until soft and mash smooth.

Add ingredients:

  • 2 eggs beaten
  • 1 cup firm tofu mashed
  • 1/2 cup rice milk or soy milk or milk
  • 1 cup leeks chopped finely
  • 1 cup celery diced
  • 1/2 cup cashews: pan roasted
  • 1 tsp Celtic or French sea salt
  • 1/4 cup fox nut: (qian shi) [euryale ferox]
